- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter
- 1 cup water
- 1 cup mashed strawberries
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract (for frosting)
- Fresh strawberries for garnish
Instructions
- Preheat the oven to 350°F (175°C) and grease a sheet cake pan.
- Combine the flour, sugar, baking soda, and salt in a large bowl.
- Melt the butter with the water and 1 cup of mashed strawberries over medium heat in a saucepan. Bring to a boil, stirring frequently.
- Pour the butter mixture into the flour mixture and stir until well combined.
- Add the eggs and vanilla extract, mixing until the batter is smooth.
- Pour the batter into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool completely.
- Mix powdered sugar, milk, and vanilla for the frosting until smooth. Spread over the cooled cake.
- Garnish with fresh strawberries just before serving.
Notes
Store covered at room temperature for up to three days or refrigerate for up to a week. Cake can be frozen for up to three months.
