Description

A delightful Southern cake infused with fresh strawberries, perfect for gatherings and celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 1 cup water
  • 1 cup mashed strawberries
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract (for frosting)
  • Fresh strawberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a sheet cake pan.
  2. Combine the flour, sugar, baking soda, and salt in a large bowl.
  3. Melt the butter with the water and 1 cup of mashed strawberries over medium heat in a saucepan. Bring to a boil, stirring frequently.
  4. Pour the butter mixture into the flour mixture and stir until well combined.
  5. Add the eggs and vanilla extract, mixing until the batter is smooth.
  6. Pour the batter into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cake to cool completely.
  8. Mix powdered sugar, milk, and vanilla for the frosting until smooth. Spread over the cooled cake.
  9. Garnish with fresh strawberries just before serving.

Notes

Store covered at room temperature for up to three days or refrigerate for up to a week. Cake can be frozen for up to three months.
