- 2 ripe peaches, pureed
- 2 cups vanilla ice cream
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the softened butter and sugar together until light and fluffy.
- Add the egg and vanilla extract, mixing until fully combined.
- Combine the flour, baking powder, and salt in a separate bowl.
- Gradually add the flour mixture to the butter mixture, stirring until just combined.
- Scoop out dough onto a baking sheet lined with parchment paper, forming approximately 2-inch circles.
- Bake for 10-12 minutes until lightly golden at the edges.
- Cool the cookies completely.
- Spread peach puree on the bottom of one cookie, add a scoop of ice cream, and top with another cookie.
- Freeze the sandwiches for at least 30 minutes before serving.
Notes
Select ripe peaches for the best flavor. Do not overmix the cookie dough.
