Description

Ingredients

  • 2 ripe peaches, pureed
  • 2 cups vanilla ice cream
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter and sugar together until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully combined.
  4. Combine the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the flour mixture to the butter mixture, stirring until just combined.
  6. Scoop out dough onto a baking sheet lined with parchment paper, forming approximately 2-inch circles.
  7. Bake for 10-12 minutes until lightly golden at the edges.
  8. Cool the cookies completely.
  9. Spread peach puree on the bottom of one cookie, add a scoop of ice cream, and top with another cookie.
  10. Freeze the sandwiches for at least 30 minutes before serving.

Notes

Select ripe peaches for the best flavor. Do not overmix the cookie dough.
