Ingredients
Scale
- 16 ounces Cream Cheese (softened to room temperature)
- 1 cup Powdered Sugar (sifted)
- 1 teaspoon Vanilla Extract
- 1 cup Pretzels (finely crushed)
- 30 Soft Caramels (unwrapped)
- 2 tablespoons Heavy Cream
- 2 cups Pretzels (finely crushed for coating)
- 1 teaspoon Sea Salt (for sprinkling, optional)
Instructions
- Mix the cream cheese in a large mixing bowl until smooth. Gradually add the sifted powdered sugar, then stir in the vanilla extract and 1 cup of crushed pretzels.
- Cover the bowl with plastic wrap and refrigerate for at least 120 minutes, or until firm enough to handle.
- Use a small cookie scoop to portion out the cheesecake mixture. Roll into smooth balls and place on a parchment-lined baking sheet.
- Melt the soft caramels and heavy cream together in the microwave until smooth, stirring in 30-second intervals.
- Dip each cheesecake ball into the warm caramel to coat fully, then place back on the baking sheet.
- Roll each caramel-coated ball in the remaining crushed pretzels, ensuring they are completely covered. Optionally, sprinkle with sea salt for added flavor.
- Refrigerate the finished cheesecake balls for at least 30 minutes to set completely before serving.
Notes
These cheesecake balls can be stored in an airtight container in the fridge for up to a week. To prepare them ahead of time, freeze the uncoated balls for up to a month.
