Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup ice water
  • 4 large ripe peaches, peeled, pitted, and sliced
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon melted butter
  • 1 tablespoon turbinado sugar (or granulated sugar)

Instructions

  1. In a medium-sized bowl, whisk together the all-purpose flour, salt, and granulated sugar.
  2. Add the diced butter into the flour mixture. Use a pastry cutter or your fingers to blend it until the mix resembles coarse crumbs.
  3. Slowly drizzle the ice water into the mixture, stirring with a spoon until the dough starts to come together. It’s important not to overmix.
  4. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  6. In a large bowl, combine the sliced peaches, brown sugar, cornstarch, vanilla extract, cinnamon, and lemon juice. Gently mix everything to coat the peaches evenly.
  7. Roll out the chilled dough on a lightly floured surface until it forms a circle about 12 inches in diameter.
  8. Place the dough onto the prepared baking sheet.
  9. Spoon the peach mixture onto the center of the dough, leaving a 2-inch border around the edges.
  10. Gently fold the edges of the dough over the filling, creating rustic pleats as you go.
  11. Brush the melted butter over the exposed edges of the dough and sprinkle it with turbinado sugar for a sweet crunch.
  12. Bake the galette in the preheated oven for 35-40 minutes, or until the crust is golden brown and the peach filling is bubbling.
  13. Allow the galette to cool slightly before serving, either warm or at room temperature.
