Ingredients

  • 1/2 cup chia seeds
  • 2 cups almond milk (or any milk of choice)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Zest of 1 lime
  • Juice of 1 lime
  • 1/2 cup shredded coconut
  • Pinch of salt

Instructions

  1. In a large bowl, whisk together the almond milk, honey (or maple syrup), vanilla extract, lime zest, lime juice, and a pinch of salt until well combined.
  2. Stir in the chia seeds and mix well to prevent clumping.
  3. Let the mixture sit for about 10 minutes to allow the chia seeds to absorb the liquid.
  4. Pour it into a lined baking dish, smoothing the top with a spatula.
  5. Sprinkle shredded coconut on top and press gently to make sure it sticks.
  6. Refrigerate for at least 180-240 minutes or until set.
