Description

Delicious cheesecake bars topped with vibrant blueberries and raspberries, perfect for summer celebrations.


Ingredients

  • 1 1/2 cups graham cracker crumbs (or gluten-free graham crackers)
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 cup blueberries
  • 1 cup raspberries

Instructions

  1. Preheat your oven to 325°F (163°C). Grab a 9×9 inch baking pan and grease it well.
  2. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl. Mix until combined, then press into the bottom of the prepared pan.
  3. Beat the softened cream cheese until smooth and creamy. Add powdered sugar and vanilla, mixing until well combined.
  4. Add the eggs one at a time, mixing just until incorporated after each addition.
  5. Pour the cheesecake filling over the crust, spreading it evenly.
  6. Bake for 30 to 35 minutes, or until the center is set but still slightly jiggly.
  7. Cool completely at room temperature, then refrigerate for at least 4 hours before cutting into bars.
  8. Top each bar with fresh blueberries and raspberries to create a flag design.

Notes

For a festive presentation, serve on a colorful platter with mint leaves. These bars can also be paired with vanilla ice cream for extra indulgence.
