- 1 1/2 cups graham cracker crumbs (or gluten-free graham crackers)
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup blueberries
- 1 cup raspberries
Instructions
- Preheat your oven to 325°F (163°C). Grab a 9×9 inch baking pan and grease it well.
- Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl. Mix until combined, then press into the bottom of the prepared pan.
- Beat the softened cream cheese until smooth and creamy. Add powdered sugar and vanilla, mixing until well combined.
- Add the eggs one at a time, mixing just until incorporated after each addition.
- Pour the cheesecake filling over the crust, spreading it evenly.
- Bake for 30 to 35 minutes, or until the center is set but still slightly jiggly.
- Cool completely at room temperature, then refrigerate for at least 4 hours before cutting into bars.
- Top each bar with fresh blueberries and raspberries to create a flag design.
Notes
For a festive presentation, serve on a colorful platter with mint leaves. These bars can also be paired with vanilla ice cream for extra indulgence.
