Ingredients

  • 4 cups sliced peaches
  • 1 cup sugar (adjust to taste)
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup cold butter (cubed)
  • 1 teaspoon salt
  • 1/4 cup ice water

Instructions

  1. Prepare the Crust: In a large bowl, combine the flour and salt. Add the cold, cubed butter. Using a pastry cutter or your fingertips, mix until the mixture resembles coarse crumbs. Gradually add ice water, stirring until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 60 minutes.
  2. Prepare the Filling: In another bowl, toss the sliced peaches with sugar, cornstarch, lemon juice, and vanilla extract. Let it sit for about 10 minutes to combine flavors and allow the juices to develop.
  3. Assemble and Bake: Preheat your oven to 375°F (190°C). Roll out one disc of refrigerated dough on a floured surface to fit your baking sheet. Transfer it to the sheet and fill the crust with the peach mixture. Roll out the second disc and place it on top. Crimp the edges to seal and create a few slits for steam to escape. Bake for 40-45 minutes, or until the crust turns golden brown. Let cool before slicing.
