Description

A delightful no-bake cheesecake layered with a creamy filling and topped with mango jelly, perfect for summer.


Ingredients

  • 1 cup crushed digestive biscuits
  • ½ cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 2 ripe mangoes, pureed
  • 2 tablespoons gelatin powder
  • ¼ cup sugar (adjust based on the sweetness of mangoes)
  • 1 cup water

Instructions

  1. Prepare the crust: In a medium bowl, mix the crushed digestive biscuits with the melted butter until well combined. Press this mixture into the bottom of a springform pan to form a crust. Place in the fridge to set while you prepare the filling.
  2. Make the cheesecake filling: In a large bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Whisk until smooth and creamy. Gently fold in the whipped cream until combined.
  3. Assemble the cheesecake: Pour the cheesecake filling over the prepared crust in the springform pan. Spread it evenly and smooth out the top. Place the cheesecake back in the fridge for about an hour to set.
  4. Prepare the mango jelly: In a small saucepan, combine the water and sugar and bring it to a gentle boil. Stir in the gelatin powder and mix until dissolved. Remove from heat and let it cool slightly. Once cooled, add the mango puree and stir well.
  5. Top the cheesecake with jelly: Once the cheesecake has set, pour the mango jelly over the top and return it to the fridge for another 2-3 hours, or until the jelly fully sets.
  6. Serve and enjoy: Once the jelly is set, gently release the springform pan. Slice and serve your No Bake Mango Cheesecake with Mango Jelly chilled.

Notes
