- 10 graham cracker sheets (finely crushed, about 1 ½ cups crumbs)
- ¼ cup confectioners’ sugar
- ½ teaspoon kosher salt
- 6 tablespoons unsalted butter (melted)
- 2 cups block-style cream cheese (softened)
- 1 cup confectioners’ sugar (sifted)
- 1 teaspoon pure vanilla extract
- 2 cups chocolate chips (melted)
Instructions
- Start by mixing the crushed graham crackers, ¼ cup confectioners’ sugar, and kosher salt in a bowl. Pour in the melted butter and stir until everything is well combined. The mixture should resemble wet sand.
- In a separate bowl, using an electric mixer, beat the softened cream cheese until smooth. Gradually add 1 cup of sifted confectioners’ sugar, mixing until fluffy. Then, stir in the vanilla extract until all ingredients are thoroughly combined.
- Take a small portion of the graham cracker mixture and press it firmly into the bottom of your desired mold or mini muffin tin to create a crust. Then, scoop the cheesecake filling on top of the crust, smoothing it out with a spatula.
- Melt the chocolate chips in a microwave-safe bowl, stirring until smooth. Pour the melted chocolate over the cheesecake layer, covering it completely.
- Place the molds in the refrigerator for about 120 minutes or until they are set and firm.
- Once set, carefully remove the cheesecake bites and watch them disappear as soon as you serve them!
Notes
For a unique twist, customize the flavors with lemon zest or almond extract. Try different toppings like fresh berries, caramel, or nuts for variation.
