Irresistible No Bake Cheesecake Bites are rich, creamy treats that are easy to make and perfect for any occasion.


Ingredients

  • 10 graham cracker sheets (finely crushed, about 1 ½ cups crumbs)
  • ¼ cup confectioners’ sugar
  • ½ teaspoon kosher salt
  • 6 tablespoons unsalted butter (melted)
  • 2 cups block-style cream cheese (softened)
  • 1 cup confectioners’ sugar (sifted)
  • 1 teaspoon pure vanilla extract
  • 2 cups chocolate chips (melted)

Instructions

  1. Start by mixing the crushed graham crackers, ¼ cup confectioners’ sugar, and kosher salt in a bowl. Pour in the melted butter and stir until everything is well combined. The mixture should resemble wet sand.
  2. In a separate bowl, using an electric mixer, beat the softened cream cheese until smooth. Gradually add 1 cup of sifted confectioners’ sugar, mixing until fluffy. Then, stir in the vanilla extract until all ingredients are thoroughly combined.
  3. Take a small portion of the graham cracker mixture and press it firmly into the bottom of your desired mold or mini muffin tin to create a crust. Then, scoop the cheesecake filling on top of the crust, smoothing it out with a spatula.
  4. Melt the chocolate chips in a microwave-safe bowl, stirring until smooth. Pour the melted chocolate over the cheesecake layer, covering it completely.
  5. Place the molds in the refrigerator for about 120 minutes or until they are set and firm.
  6. Once set, carefully remove the cheesecake bites and watch them disappear as soon as you serve them!

Notes

For a unique twist, customize the flavors with lemon zest or almond extract. Try different toppings like fresh berries, caramel, or nuts for variation.
