- 2 ripe mangoes, peeled and diced
- 1 cup Greek yogurt
- 1/2 cup chia seeds
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons honey or maple syrup
- Granola or crushed nuts for layering
- Mint leaves for garnish (optional)
Instructions
- Blend the mango and yogurt: In a blender, combine the diced mangoes and Greek yogurt until smooth.
- Mix chia seeds and berries: In a separate bowl, mix chia seeds with the mixed berries and sweetener. Let this sit for at least 30 minutes.
- Layer the parfait: Grab serving glasses and start layering the mango yogurt mixture and berry chia jam, sprinkling granola or crushed nuts on top.
- Repeat layering until your glasses are full.
- Garnish and serve: Optionally garnish with mint leaves and serve chilled.
Notes
