- 1 cup pure pumpkin puree
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 1 cup all-purpose flour

- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg

Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the pumpkin puree, vegetable oil, eggs, vanilla extract, and sugar until smooth.
- Whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt in another bowl.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.
Notes
Serve warm with honey or cream cheese frosting. They can also be frozen for later use.
