A delightful fusion of mango sticky rice and invigorating matcha, made creamy with coconut milk and served over ice.

- ¼ cup diced mango
- 1–2 tbsp water
- 1½ tsp matcha powder
- ¼ cup water
- ¼ cup coconut milk
- ½ cup rice milk
- 2–3 thin slices mango (for garnish)
- 1 pinch black sesame seeds (for garnish)
- ¼ cup mango puree
- 1 cup ice
- ½ tsp salt
- ½ tbsp sugar
- ¼ cup coconut milk
- ¼ cup heavy or coconut cream
Instructions
- Begin by adding the diced mango and 1-2 tablespoons of water to a small blender. Blend for about 10 seconds or until the mango puree is smooth.
- Next, sift the matcha powder into a matcha bowl, then add ¼ cup of water. Whisk it for 20-30 seconds in a zigzag motion using a matcha whisk until a foam with tight bubbles forms.
- In a tall glass, combine the salt, sugar, coconut milk, and heavy or coconut cream. Use a handheld frother to whip it for about 10-15 seconds until it becomes soft and fluffy, but still pourable.
- To assemble your latte, add ice, rice milk, the prepared coconut milk, and the whisked matcha to the glass. Then, top it off with the salted coconut cream.
- For the finishing touch, garnish with thin slices of mango and a sprinkle of black sesame seeds.
- Finally, mix everything together and enjoy your refreshing drink!
Notes
Best served fresh, but components can be made in advance. Store leftovers properly for best flavor.
