Description

Delightful ice cream sandwiches made with soft, chewy cookies and creamy ice cream, perfect for summer treats.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups ice cream (your choice of flavor)
  • Chocolate chips or sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the flour, cocoa powder, baking soda, and salt in a bowl.
  3. Beat together the softened butter, brown sugar, and granulated sugar until creamy.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until the edges are set but the center is still soft.
  8. Allow cookies to cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
  9. Place a scoop of ice cream between two cookies, pressing gently to sandwich them together.
  10. Roll the edges in chocolate chips or sprinkles if desired.
  11. Serve immediately or freeze for later enjoyment.

Notes

Store leftover ice cream sandwiches wrapped tightly in plastic wrap or aluminum foil to prevent freezer burn.
