- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups ice cream (your choice of flavor)
- Chocolate chips or sprinkles (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the flour, cocoa powder, baking soda, and salt in a bowl.
- Beat together the softened butter, brown sugar, and granulated sugar until creamy.
- Add the egg and vanilla extract, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are set but the center is still soft.
- Allow cookies to cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
- Place a scoop of ice cream between two cookies, pressing gently to sandwich them together.
- Roll the edges in chocolate chips or sprinkles if desired.
- Serve immediately or freeze for later enjoyment.
Notes
Store leftover ice cream sandwiches wrapped tightly in plastic wrap or aluminum foil to prevent freezer burn.
