Description
A warm, gooey strawberry cheesecake French toast bake filled with cream cheese and fresh strawberries, perfect for brunch.
Ingredients

- 1 loaf of bread (such as brioche or challah)
- 8 oz cream cheese, softened
- 2 cups fresh strawberries, quartered
- 6 large eggs
- 1 cup milk
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Optional: powdered sugar for serving
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- Cut the loaf of bread into cubes and layer half in the bottom of the baking dish.
- Blend the cream cheese and sugar until smooth; spread half over the bread layer.
- Sprinkle half of the strawberries over the cream cheese layer.
- Add the remaining bread cubes on top, followed by the rest of the cream cheese mixture and strawberries.
- Whisk the eggs, milk, vanilla extract, and cinnamon until well combined; pour evenly over the bread.
- Cover with foil and refrigerate for at least 30 minutes or overnight.
- Bake covered for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden brown.
- Serve warm, optionally dusted with powdered sugar.
Notes
For additional flavor, consider adding blueberries or raspberries as variations.
