Description

A refreshing summer dessert bursting with the flavor of juicy watermelon, perfect for warm sunny days and family gatherings.


Ingredients

  • 4 cups watermelon, cubed
  • 1/2 cup sugar
  • 1/4 cup lemon juice
  • 2 tablespoons gelatin (or agar-agar for a vegetarian option)
  • Fresh mint leaves for garnish
  • Crushed pistachios for garnish

Instructions

  1. Start by cutting the watermelon into cubes and removing any seeds. This’ll help to create a smooth puree later on.
  2. Blend the watermelon cubes until smooth. If desired, strain the juice through a fine mesh sieve to remove pulp.
  3. In a saucepan over medium heat, combine the watermelon juice with sugar and lemon juice. Stir until the sugar dissolves completely.
  4. Once the sugar is dissolved, stir in the dissolved gelatin (or agar-agar) until smooth and well combined.
  5. Carefully pour the mixture into molds or cups, avoiding overfilling. Refrigerate for at least 240 minutes until set.
  6. When ready to serve, gently remove the pudding from the molds and place it in cups. Garnish with fresh mint and crushed pistachios. Enjoy!

Notes

For a tropical twist, try adding crushed pineapple or coconut milk. Use ripe watermelon for maximum sweetness.
