- 4 cups watermelon, cubed
- 1/2 cup sugar
- 1/4 cup lemon juice
- 2 tablespoons gelatin (or agar-agar for a vegetarian option)
- Fresh mint leaves for garnish
- Crushed pistachios for garnish
Instructions
- Start by cutting the watermelon into cubes and removing any seeds. This’ll help to create a smooth puree later on.
- Blend the watermelon cubes until smooth. If desired, strain the juice through a fine mesh sieve to remove pulp.
- In a saucepan over medium heat, combine the watermelon juice with sugar and lemon juice. Stir until the sugar dissolves completely.
- Once the sugar is dissolved, stir in the dissolved gelatin (or agar-agar) until smooth and well combined.
- Carefully pour the mixture into molds or cups, avoiding overfilling. Refrigerate for at least 240 minutes until set.
- When ready to serve, gently remove the pudding from the molds and place it in cups. Garnish with fresh mint and crushed pistachios. Enjoy!
Notes
For a tropical twist, try adding crushed pineapple or coconut milk. Use ripe watermelon for maximum sweetness.
