These Healthy Strawberry Oatmeal Bars combine juicy strawberries with wholesome oats and a touch of sweet maple syrup, making them perfect for breakfast, snacks, or guilt-free desserts.

- 3 cups fresh strawberries, diced
- 1/4 cup maple syrup
- 1 tablespoon lemon juice
- 1–2 tablespoons lemon zest
- A pinch of sea salt
- 2 tablespoons tapioca starch
- 1 1/2 cups rolled oats (gluten-free if needed)
- 1 1/2 cups almond flour
- 1/2 teaspoon baking soda
- 1/8 teaspoon sea salt
- 1/2 cup maple syrup
- 1/3 cup coconut oil, solid at room temperature
- 1 teaspoon lemon juice
Instructions
- Combine the diced strawberries, 1/4 cup maple syrup, 1 tablespoon lemon juice, lemon zest, and a pinch of sea salt in a small pot over medium heat. Simmer for 5-10 minutes until the strawberries release their juices. Stir in the tapioca starch and let it simmer for another minute before removing from heat. Set aside.
- Preheat your oven to 375°F. Line an 8×8 baking dish with parchment paper.
- Mix the rolled oats, almond flour, baking soda, and sea salt in a large mixing bowl. Add the remaining maple syrup, coconut oil, and lemon juice. Use your hands or a spoon to mix thoroughly.
- Reserve about 1/2 to 3/4 cup of the oatmeal mixture to sprinkle on top later. Press the remaining mixture evenly into the lined baking dish.
- Spread the strawberry filling over the oatmeal layer, smoothing it out.
- Sprinkle the reserved oatmeal mixture over the strawberry filling.
- Bake for 20-25 minutes or until the edges are slightly golden.
- Cool the bars completely in the dish before slicing into squares.
Notes
For best results, use ripe strawberries and let the bars cool completely before slicing.
