Description

These Healthy Strawberry Oatmeal Bars combine juicy strawberries with wholesome oats and a touch of sweet maple syrup, making them perfect for breakfast, snacks, or guilt-free desserts.


Ingredients

  • 3 cups fresh strawberries, diced
  • 1/4 cup maple syrup
  • 1 tablespoon lemon juice
  • 12 tablespoons lemon zest
  • A pinch of sea salt
  • 2 tablespoons tapioca starch
  • 1 1/2 cups rolled oats (gluten-free if needed)
  • 1 1/2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon sea salt
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil, solid at room temperature
  • 1 teaspoon lemon juice

Instructions

  1. Combine the diced strawberries, 1/4 cup maple syrup, 1 tablespoon lemon juice, lemon zest, and a pinch of sea salt in a small pot over medium heat. Simmer for 5-10 minutes until the strawberries release their juices. Stir in the tapioca starch and let it simmer for another minute before removing from heat. Set aside.
  2. Preheat your oven to 375°F. Line an 8×8 baking dish with parchment paper.
  3. Mix the rolled oats, almond flour, baking soda, and sea salt in a large mixing bowl. Add the remaining maple syrup, coconut oil, and lemon juice. Use your hands or a spoon to mix thoroughly.
  4. Reserve about 1/2 to 3/4 cup of the oatmeal mixture to sprinkle on top later. Press the remaining mixture evenly into the lined baking dish.
  5. Spread the strawberry filling over the oatmeal layer, smoothing it out.
  6. Sprinkle the reserved oatmeal mixture over the strawberry filling.
  7. Bake for 20-25 minutes or until the edges are slightly golden.
  8. Cool the bars completely in the dish before slicing into squares.

Notes

For best results, use ripe strawberries and let the bars cool completely before slicing.
