Description

Fluffy, fruity homemade marshmallows made with fresh raspberries, perfect for snacking and sharing.


Ingredients

  • 1/2 cup frozen raspberries
  • 1/2 cup freeze-dried raspberries
  • 1/4 cup grass-fed gelatin
  • 1 1/2 tsp vanilla extract
  • 1/2 cup water
  • 1 cup honey or maple syrup

Instructions

  1. Prep Your Pan: Line a 9×9 pan with parchment paper and spray with cooking oil.
  2. Blend Raspberries: Combine 1/2 cup water with both frozen and freeze-dried raspberries in a blender and blend until smooth.
  3. Strain the Mixture: Pour through a strainer into the bowl of your stand mixer to remove seeds.
  4. Mix in the Goodness: Add vanilla extract and gelatin; mix well and let sit.
  5. Make the Syrup: In a pot, combine remaining water and honey; boil for about 10 minutes until it reaches 220-240°F.
  6. Whip It Up: Remove from heat, add syrup to the stand mixer, and whip until thick and fluffy (about 2-3 minutes).
  7. Pour and Set: Pour into prepared pan, smooth it out, and let sit at room temperature for 30-60 minutes until firm.
  8. Let it Rest: Once firm, cut into marshmallows using scissors.

Notes

Store in an airtight container to keep the marshmallows fresh and fluffy. They can last up to two weeks if stored properly.
