Description

A no-bake gluten-free cherry icebox cake layered with chocolate cookies, whipped cream, and cherries, perfect for any occasion.


Ingredients

  • 1 package gluten-free chocolate cookies
  • 2 cups cherries, pitted and halved
  • 2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Cherry juice or syrup (optional for extra flavor)

Instructions

  1. Whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Layer the gluten-free chocolate cookies at the bottom of a rectangular dish.
  3. Spread a layer of whipped cream over the cookies, then add a layer of cherries.
  4. Repeat the layers until all ingredients are used, finishing with a layer of whipped cream on top.
  5. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
  6. Top with additional cherries or a drizzle of cherry juice or syrup before serving.
