Description

Frozen Tiramisu Rochers are a delightful dessert combining coffee and chocolate in a creamy, bite-sized treat.


Ingredients

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup brewed coffee (cooled)
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 package ladyfinger cookies
  • 1/2 cup cocoa powder
  • 1 cup dark chocolate (chopped)
  • 1 tablespoon coconut oil (or butter)

Instructions

  1. Prepare the cream mixture: In a mixing bowl, combine the mascarpone cheese, heavy cream, sugar, vanilla extract, and half a cup of cooled coffee. Beat with an electric mixer until the mixture thickens and forms soft peaks.
  2. Layer the flavors: In a shallow dish, pour the remaining coffee. Quickly dip each ladyfinger into the coffee, making sure not to soak them for too long.
  3. Assemble the rochers: In a muffin tin or silicone molds, place a layer of dipped ladyfingers in the bottom. Spoon a layer of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers followed by another layer of the cream mixture.
  4. Freeze: Once assembled, place the muffin tin or molds in the freezer. Allow them to freeze for at least 240 minutes, or until completely firm.
  5. Make the chocolate coating: In a heatproof bowl, melt the chopped dark chocolate and coconut oil together in the microwave or over a double boiler. Stir until smooth.
  6. Coat the rochers: Once the rochers are frozen solid, carefully remove them from the molds and dip each one into the melted chocolate, coating them evenly.
  7. Final touch: Dust the coated rochers with cocoa powder and return them to the freezer to set for about 30 minutes.
