Description

A delightful fusion of rich chocolate, crunchy nuts, and tropical coconut, these Eskimo Cookies are perfect for any occasion.


Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
  • 1 cup shredded coconut
  • 1 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then add the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Fold the dry mixture into the creamed mixture until just combined.
  6. Fold in the chocolate chips, shredded coconut, and nuts if using.
  7. Drop spoonfuls of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes or until edges are golden brown.
  9. Let them cool before transferring to wire racks.
