- 2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- Combine the grated zucchini, sugar, and eggs in a large bowl. Mix well.
- Add in the vegetable oil and vanilla extract, stirring until everything is combined.
- Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about ten minutes before transferring it to a wire rack to cool completely.
Notes
For a lighter loaf, make sure to squeeze out excess moisture from the grated zucchini.
