Instructions
- Slice the watermelon into thick rectangles, about 1 to 2 inches thick.
- Melt white chocolate chips in a microwave-safe bowl, stirring every 30 seconds.
- Prepare the pops by dipping one end of a watermelon slice into melted white chocolate and rolling it in sprinkles.
- Insert a cake pop stick or skewer into the non-dipped end of the watermelon slice.
- Chill the pops on a baking sheet lined with parchment paper for about 30 minutes.
Notes
Best served chilled and can be garnished with fresh mint leaves or a yogurt dip. Store leftovers in an airtight container in the refrigerator and use parchment paper between layers if stacking.
