Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13 inch cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the mint extract and bourbon, letting the flavors mingle.
  5. Combine the flour, baking powder, baking soda, and salt in another bowl. Whisk well to ensure everything is combined.
  6. Gradually add this dry mixture to the wet ingredients, alternating with the buttermilk. Stir until just combined.
  7. Fold in the chopped mint leaves for extra freshness.
  8. Pour the batter into the prepared cake pan and smooth the top.
