Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9×13 inch cake pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the mint extract and bourbon, letting the flavors mingle.
- Combine the flour, baking powder, baking soda, and salt in another bowl. Whisk well to ensure everything is combined.
- Gradually add this dry mixture to the wet ingredients, alternating with the buttermilk. Stir until just combined.
- Fold in the chopped mint leaves for extra freshness.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick comes out clean from the center.
- Let the cake cool before dusting it with powdered sugar and serving.
