  • 1 cup granulated sugar
  • 2 large eggs
  • 1.5 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 1.25 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.5 cups sour cream
  • 16 ounces strawberries, sliced (about 2 cups)
  • 3 tablespoons granulated sugar (for topping)
  • 2 tablespoons powdered sugar (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line it with parchment paper to ensure easy removal.
  3. Cream together the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Sift together the flour, baking powder, and salt in a separate bowl.
  6. Gradually add the dry mixture into the wet mixture, alternating with sour cream, starting and ending with flour.
  7. Fold in the sliced strawberries gently, being careful not to crush them.
  8. Pour the batter into the prepared cake pan and sprinkle the remaining granulated sugar on top.
  9. Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool the cake for a few minutes before transferring it to a wire rack to cool completely.
