Description

Delightfully sweet and tangy bars with a buttery shortbread crumble, perfect for any occasion.


Ingredients

  • 1 cup (226 g) unsalted butter, room temperature
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 3 1/4 cups (405 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 2 1/2 cups fresh or frozen cranberries
  • 2/3 cup (133 g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla extract
  • 3/4 cup powdered sugar, sifted
  • 4 tablespoons whole milk or heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Cream together the butter and sugars in a stand mixer until light and fluffy, about 3 minutes.
  2. Add the egg and vanilla, mixing until well combined.
  3. Whisk together the flour, baking powder, cinnamon, and salt in a separate bowl.
  4. Gradually add the dry ingredients to the wet mixture, mixing until the dough pulls away from the sides.
  5. Set aside roughly 2 cups of dough for the topping.
  6. Press the dough firmly into an 8×8 baking pan lined with parchment paper.
  7. Bake at 350°F (175°C) for 15 minutes until edges are golden.
  8. Mix cranberries, sugar, cornstarch, orange zest, orange juice, and vanilla in a bowl.
  9. Pour the cranberry mixture over the pre-baked crust.
  10. Break the reserved dough into flat pieces and scatter over the cranberries.
  11. Bake for about 45 minutes, covering with foil for the last 10-15 minutes to prevent over-browning.
  12. Cool completely before adding the glaze.
  13. Whisk the glaze ingredients together and drizzle over the bars.
  14. Slice into squares and enjoy!

Serve warm with whipped cream or vanilla ice cream for an extra special treat.
