Description

This cottage cheese banana bread is naturally sweet, moist, and protein-packed—perfect for breakfast, snack, or dessert.


Ingredients

Scale
  • 3 ripe bananas.
  • 1/2 cup cottage cheese.
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • Optional: 1/4 cup maple syrup
  • Optional: 1/2 cup chocolate chips or nuts

Instructions

1. Preheat oven to 350°F. Grease or line a loaf pan.
2. In a bowl, mash bananas well.
3. Whisk in cottage cheese, eggs, vanilla, and maple syrup if using.
4. In another bowl, mix flour, baking soda, baking powder, cinnamon, and salt.
5. Stir dry ingredients into wet just until combined.
6. Fold in chocolate chips or nuts if using.
7. Pour into loaf pan and smooth top.
8. Bake for 45–55 minutes until golden and a toothpick comes out clean.
9. Cool in pan 10 minutes, then transfer to wire rack to cool fully.

Notes

Use very ripe bananas for best flavor.
Do not overmix or loaf will be dense.
Let rest overnight for best texture.
Bake in muffin tins for easy portions.
Use oat or almond flour for gluten-free version.
