- ½ cup cocoa powder
- 2 tablespoons cornstarch
- 1 teaspoon baking soda

- 12 tablespoons salted butter, softened
- ¾ cup packed light brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- Rainbow chip sprinkles
Instructions
- Whisk together the flour, cocoa powder, cornstarch, baking soda, and salt in a small bowl. Set aside.
- Combine softened butter, light brown sugar, and granulated sugar in a large mixing bowl and cream until light and fluffy, about 2-3 minutes.
- Add egg, egg yolk, and vanilla extract to the mixture and beat until combined.
- Gradually mix in the dry ingredients until the dough forms; chill in plastic wrap for at least one hour.
- Preheat the oven to 350°F (175°C) and prepare cookie sheets with parchment paper.
- Portion the dough into balls using a 2-tablespoon scoop, placing 12 per cookie sheet.
- Bake for 12-15 minutes, allowing to cool on the cookie sheet for 10 minutes before transferring to a rack.
- Prepare the ganache by melting chocolate chips with heavy cream in intervals until smooth.
- Spread the ganache over each cookie and sprinkle with rainbow chips. Let set for 20 minutes before enjoying.
