Ingredients

- 2 cups frozen mango
- 1 can (14 oz) full-fat coconut milk, cream only
- 1/2 cup almond milk
- 1/4 cup honey
- 1 tablespoon lime juice
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch (optional)
- Shredded coconut (optional)
Instructions
- Blend all ingredients—except the shredded coconut—into your blender or food processor until smooth and creamy.
- Pour the mixture into popsicle molds, insert the popsicle sticks, and freeze for at least six hours.
- Garnish with shredded coconut if desired, before serving.
Notes
Adjust sweetness with more honey or use maple syrup as an alternative. For creamier popsicles, use just the coconut cream from the coconut milk.
