- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup mini chocolate chips
- 1 cup cookie dough (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- Combine the graham cracker crumbs, melted butter, and sugar in a mixing bowl. Stir until well combined and press this mixture evenly into the bottom of your prepared baking dish to form the crust.
- Beat together the cream cheese, 1/2 cup of sugar, and vanilla extract until the mixture is smooth and creamy. Add the eggs one at a time, mixing well after each addition.
- Fold in the mini chocolate chips, and then pour this luscious cheesecake mixture over the graham cracker crust.
- Drop spoonfuls of cookie dough on top of the cheesecake layer, making sure to space them out evenly.
- Bake for 30-35 minutes or until the edges are set and the center remains slightly jiggly.
- Allow the bars to cool at room temperature, and then refrigerate for at least 2 hours before serving. When you’re ready to enjoy, cut them into bars and savor each bite!
Notes
For best results, use room temperature cream cheese and be patient with refrigerating the bars for at least two hours before serving.
