Description

A deliciously dreamy Blueberry Lemon Cake that combines bright lemon flavors with sweet blueberries and is topped with luscious cream cheese frosting.


Ingredients

  • 2 large eggs

  • Zest of 1 lemon

  • 1 cup fresh blueberries (plus more for garnish, if desired)
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream the butter and sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and fresh lemon juice.
  5. Incorporate dry ingredients into the wet mixture, mixing just until no flour streaks remain. Be careful not to overmix!
  6. Fold in the fresh blueberries gently with a spatula.
  7. Divide the batter evenly between the prepared pans and spread into an even layer. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the cakes in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  9. Make the frosting: Beat together the softened cream cheese and butter until smooth. Gradually add powdered sugar, mixing until combined. Stir in the vanilla extract and lemon juice until well incorporated.
  10. Assemble the cake: Once the cake layers are completely cool, place one layer on a serving plate. Spread a layer of cream cheese frosting on top, then place the second layer on top and frost the top and sides of the entire cake. Garnish with extra blueberries, if desired.

Notes

For extra lemony goodness, add more lemon zest or a splash of lemon extract to the batter or frosting.
