- 1/2 cup almond flour
- 1/4 cup granulated sugar
- 2 large eggs
- 1/4 teaspoon vanilla extract
- Sliced almonds for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the flour, butter, powdered sugar, and salt in a bowl until crumbly.
- Add the egg yolk and almond extract, mixing until combined.
- Press the mixture into a tart pan to form the crust.
- Bake the crust for 15 minutes until golden brown.
- Spread the apricot jam over the cooled crust.
- Whisk together almond flour, granulated sugar, eggs, and vanilla in a new bowl.
- Pour the almond mixture over the apricot jam.
- Top with sliced almonds.
- Bake for an additional 25-30 minutes until set and golden on top.
- Cool before slicing and serving.
