Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1/4 teaspoon almond extract
  • 1 cup apricot jam
  • 1/2 cup almond flour
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/4 teaspoon vanilla extract
  • Sliced almonds for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, butter, powdered sugar, and salt in a bowl until crumbly.
  3. Add the egg yolk and almond extract, mixing until combined.
  4. Press the mixture into a tart pan to form the crust.
  5. Bake the crust for 15 minutes until golden brown.
  6. Spread the apricot jam over the cooled crust.
  7. Whisk together almond flour, granulated sugar, eggs, and vanilla in a new bowl.
  8. Pour the almond mixture over the apricot jam.
  9. Top with sliced almonds.
  10. Bake for an additional 25-30 minutes until set and golden on top.
  11. Cool before slicing and serving.
