- 3 ripe bananas
- 1 cup granulated sugar
- 1/4 cup unsalted butter
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy release.
- In a saucepan over medium heat, melt the butter and granulated sugar together until combined. Stir in the brown sugar and continue to cook for another minute until it’s bubbly. Pour this caramel mixture into the prepared cake pan.
- Slice the bananas into rounds and arrange them evenly on top of the caramel mixture. Set aside.
- In a large mixing bowl, beat together the remaining butter and the vanilla extract with a mixer until creamy. Add the eggs, one at a time, thoroughly mixing after each addition.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet mixture until just combined. Be careful not to overmix!
- Fold in the chocolate chips gently into the batter.
- Pour the cake batter over the bananas in the pan, ensuring it covers them evenly.
- Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove from the oven and let it cool for about 10 minutes. Then, place a serving plate over the cake pan and flip it upside down to release the cake. Carefully remove the pan and parchment paper.
- Allow the cake to cool slightly before serving warm. Enjoy with whipped cream or vanilla ice cream!
Notes
For best results, use overripe bananas. Serve warm with cream or ice cream for extra indulgence.
