Moist and fluffy Zucchini Orange Bread, infused with fresh orange juice and zest, perfect for breakfast or dessert.

- 4 large eggs
- 1 1/2 cups sugar
- 3/4 cup vegetable oil
- 2/3 cup orange juice
- 2 cups shredded unpeeled zucchini
- 3 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons grated orange zest
- 2 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 cup chopped nuts (optional)
- 1 cup powdered sugar
- 2–3 tablespoons orange juice
Instructions
- Preheat the oven to 350°F (175°C) and grease two loaf pans.
- In a large mixing bowl, beat eggs until thick and pale, then mix in the sugar until combined.
- Stir in oil, orange juice, and shredded zucchini until mixed.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, orange zest, ground cinnamon, and ground cloves.
- Gradually add dry ingredients to wet mixture, stirring gently until just combined. Fold in nuts, if using.
- Divide batter evenly between prepared pans and bake for 45-55 minutes, or until a toothpick comes out clean.
- Allow to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Whisk together powdered sugar and orange juice for glaze and drizzle over warm loaves.
- Let cool completely before wrapping up for storage.
Notes
Use young, firm zucchini for best results. Can be stored at room temperature or frozen for longer preservation.
