Description

Moist and fluffy Zucchini Orange Bread, infused with fresh orange juice and zest, perfect for breakfast or dessert.


Ingredients

  • 4 large eggs
  • 1 1/2 cups sugar
  • 3/4 cup vegetable oil
  • 2/3 cup orange juice
  • 2 cups shredded unpeeled zucchini
  • 3 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons grated orange zest
  • 2 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 cup chopped nuts (optional)
  • 1 cup powdered sugar
  • 23 tablespoons orange juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two loaf pans.
  2. In a large mixing bowl, beat eggs until thick and pale, then mix in the sugar until combined.
  3. Stir in oil, orange juice, and shredded zucchini until mixed.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, orange zest, ground cinnamon, and ground cloves.
  5. Gradually add dry ingredients to wet mixture, stirring gently until just combined. Fold in nuts, if using.
  6. Divide batter evenly between prepared pans and bake for 45-55 minutes, or until a toothpick comes out clean.
  7. Allow to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. Whisk together powdered sugar and orange juice for glaze and drizzle over warm loaves.
  9. Let cool completely before wrapping up for storage.

Notes

Use young, firm zucchini for best results. Can be stored at room temperature or frozen for longer preservation.
