Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan.
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- Whip the egg whites until they form sturdy peaks.
- In another bowl, mix yogurt, vanilla extract, and lemon zest, then add to the dry ingredients.
- Gently fold in the whipped egg whites.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes until golden brown and springy to the touch.
- Let the cake cool completely in the pan before releasing it.
