Description

A delightful no-bake treat made with Medjool dates, creamy peanut butter, crunchy dry roasted peanuts, and a luscious layer of melted chocolate.


Ingredients

  • 2024 Medjool dates
  • 2/3 cup creamy peanut butter
  • 1/2 cup dry roasted peanuts
  • 9 ounces chocolate chips or a chocolate bar
  • 1 teaspoon coconut oil – optional
  • Coarse sea salt – optional for topping

Instructions

  1. Start by lining a medium-sized baking sheet with parchment paper.
  2. Next, take your Medjool dates and carefully slit each one, removing the pits if needed.
  3. Arrange the dates on the lined pan in a rectangular shape.
  4. Pour and spread the creamy peanut butter evenly over the layer of dates.
  5. Now, sprinkle the dry roasted peanuts in an even layer over the peanut butter.
  6. In a microwave-safe bowl, combine the chocolate chips and coconut oil.
  7. Microwave in 30-second increments until the chocolate is mostly melted.
  8. Pour the melted chocolate evenly over the peanut butter and peanuts.
  9. Pop the baking sheet into the freezer for 60-90 minutes or until set.
  10. Once ready, remove the bark from the freezer and peel off the parchment paper.
  11. Slice it into bite-sized pieces.
  12. Serve and enjoy your delicious creation!

Store any leftover pieces in an airtight container in the refrigerator for up to two weeks, or freeze for longer storage.
