A delightful no-bake treat made with Medjool dates, creamy peanut butter, crunchy dry roasted peanuts, and a luscious layer of melted chocolate.

- 20–24 Medjool dates
- 2/3 cup creamy peanut butter
- 1/2 cup dry roasted peanuts
- 9 ounces chocolate chips or a chocolate bar
- 1 teaspoon coconut oil – optional
- Coarse sea salt – optional for topping
Instructions
- Start by lining a medium-sized baking sheet with parchment paper.
- Next, take your Medjool dates and carefully slit each one, removing the pits if needed.
- Arrange the dates on the lined pan in a rectangular shape.
- Pour and spread the creamy peanut butter evenly over the layer of dates.
- Now, sprinkle the dry roasted peanuts in an even layer over the peanut butter.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil.
- Microwave in 30-second increments until the chocolate is mostly melted.
- Pour the melted chocolate evenly over the peanut butter and peanuts.
- Pop the baking sheet into the freezer for 60-90 minutes or until set.
- Once ready, remove the bark from the freezer and peel off the parchment paper.
- Slice it into bite-sized pieces.
- Serve and enjoy your delicious creation!
Notes
Store any leftover pieces in an airtight container in the refrigerator for up to two weeks, or freeze for longer storage.
