Delightfully nutty and elegant vegan macarons with a pistachio twist.


Ingredients

  • 90 grams almond flour
  • 90 grams powdered sugar
  • 30 grams pistachio flour
  • 75 grams aquafaba
  • 1/2 teaspoon cream of tartar
  • 66 grams granulated sugar
  • 4 tablespoons vegan butter (56.5 grams)
  • 1/4 cup pistachio flour (30 grams)
  • 1 1/2 cups powdered sugar (sifted, 187.5 grams)
  • 1/2 teaspoon vanilla extract
  • 1 cup pistachios (dry roasted and shelled)

Instructions

  1. Preheat your oven to 300°F (150°C). Line several baking sheets with parchment paper.
  2. Make the pistachio flour: Lightly pulse unsalted pistachios in a food processor until they reach a fine flour consistency.
  3. Combine the dry ingredients: In a bowl, mix almond flour, powdered sugar, and 30 grams of pistachio flour. Sift this mixture to ensure it’s free of lumps.
  4. Whip the aquafaba: Using a mixer, whip the aquafaba until frothy, then add cream of tartar and continue until you reach soft peaks.
  5. Add the sugar: Gradually add granulated sugar to the whipped aquafaba until stiff peaks form (about 6-8 minutes).
  6. Fold in the dry mixture gently, careful not to deflate the aquafaba.
  7. Pipe the macarons: Transfer the mixture to a piping bag and pipe 1.5-inch circles onto the prepared baking sheets. Let sit for 30-45 minutes to form a skin.
  8. Bake for 20-25 minutes or until easily lifting off the parchment.
  9. For the filling, beat together vegan butter and pistachio flour, then gradually add sifted powdered sugar and vanilla extract until smooth.
  10. To assemble, pair macaron shells and pipe pistachio buttercream between them.

Notes

Store macarons in an airtight container in the refrigerator for up to a week. Allow to sit at room temperature for 15 minutes before serving.
