Delightful vegan pastries filled with luscious strawberry jam, perfect for a cozy evening or as a sweet centerpiece.

- 240g plain flour
- 2 tablespoons caster sugar (plus extra for sprinkling)
- 220g dairy-free block butter (cold and cut into small cubes)
- Ice-water (as needed)
- 1 jar vegan-friendly strawberry jam
- Dairy-free milk (optional)
- Icing sugar (dusting, optional)
Instructions
- Preheat your oven to 180°C (350°F).
- In a large mixing bowl, combine plain flour and caster sugar. Add the cold dairy-free butter cubes and rub it into the flour until crumbly.
- Add ice-water gradually while mixing, forming a non-sticky dough. Wrap in cling film and refrigerate for about 30 minutes.
- Dust your work surface with flour and roll out the chilled dough to 0.5 cm thick. Cut squares about 10cm by 10cm.
- Place a spoonful of strawberry jam in the center of each square.
- Bring the corners together to form an envelope shape and pinch the edges to seal.
- Line a baking tray with parchment paper and place pastries on it, leaving space for expansion. Brush with dairy-free milk and sprinkle with caster sugar.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool slightly on a wire rack. Dust with icing sugar before serving.
Notes
For best results, chill your butter and don’t overfill the pastries. Experiment with different jams or nut butters for variety.
