Description

These vibrant and whimsical Valentine’s Day Swirl Cookies are a delightful treat for any occasion, perfect for sharing with loved ones.


Ingredients

Scale
  • 2 cups flour (plus possibly a few more tablespoons)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup unsifted powdered sugar
  • 1/4 cup granulated sugar
  • 2 1/2 sticks unsalted butter (cut in chunks)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon of food coloring of your choice (and/or 1/2 teaspoon of any desired extra extracts)
  • 1 1/2 cups holiday sprinkles

Instructions

  1. In a bowl of a stand mixer, combine flour, baking powder, salt, and sugars. Mix them with a paddle attachment on medium speed until well blended.
  2. Gradually add the chunks of butter and continue mixing. Add in the vanilla extract and mix until the dough forms a ball.
  3. Divide the dough into two equal portions.
  4. Add food coloring and any extra extracts to one portion and mix until the color is evenly spread throughout.
  5. Roll out each portion of dough between two sheets of wax paper until each piece measures about 11 x 9 inches and is 1/4 inch thick.
  6. Transfer both dough sheets onto a cookie sheet and chill in the refrigerator for at least 1 hour.
  7. Once firm, peel the top sheets of wax paper away from both dough portions. Lightly brush the uncolored dough with water.
  8. Flip the colored dough onto the uncolored dough so that they stack evenly. Press the edges lightly with your fingertips to seal.
  9. Using a small knife, trim the edges to make straight, even lines.
  10. Roll the dough jelly-roll style along the long side to form a log.
  11. Pour the sprinkles onto a large platter and carefully lift the dough log onto the sprinkles, rolling it until the log is coated.
  12. Wrap the log in plastic wrap and chill for a few hours, or freeze for up to three months.
  13. When ready, slice the chilled log into 1/4 inch slices and bake on parchment-lined baking sheets in a preheated 350°F (175°C) oven for 15 to 17 minutes, or until edges begin to turn golden brown.
  14. Let the cookies rest on the baking sheet for about 5 minutes, then transfer to a cookie rack to finish cooling.

Notes

Make sure to chill your dough sufficiently to prevent the cookies from spreading too much while baking. Use quality ingredients for the best flavor.
