Description

Delight in these easy-to-make tartlets featuring a rich chocolate filling topped with luscious vanilla caramel.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ cup powdered sugar
  • ½ cup unsalted butter, softened
  • 1 large egg yolk
  • A pinch of salt
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped
  • ¼ cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter, cut into pieces (for caramel)
  • ½ cup heavy cream (for caramel)
  • 1 teaspoon vanilla extract (for caramel)
  • A pinch of sea salt (for caramel)

Instructions

  1. Prepare the crust: In a mixing bowl, combine the flour, cocoa powder, powdered sugar, and salt. Add the softened butter and mix until crumbly. Stir in the egg yolk until the dough comes together. Press the dough into tartlet pans and chill for about 30 minutes.
  2. Bake the crusts: Preheat your oven to 350°F (175°C). Bake the crusts for about 15-20 minutes, or until they’re firm and slightly set. Once baked, set aside to cool.
  3. Make the chocolate filling: In a saucepan, heat the cream over medium heat until it begins to simmer. Remove it from the heat and add the chopped chocolate and butter. Stir until smooth and glossy. Add in the sugar and vanilla extract, mixing until well combined.
  4. Fill the tartlets: Pour the chocolate filling into the cooled tartlet crusts, filling them up to the rim. Let them sit at room temperature while you prepare the caramel.
  5. Prepare the vanilla caramel: In another saucepan, heat the sugar over medium heat, stirring occasionally until it melts and turns golden brown. Be cautious not to burn it! Once melted, carefully whisk in the butter until melted and smooth. Slowly pour in the heavy cream, whisking until fully combined. Stir in the vanilla and salt.
  6. Top the tartlets: Drizzle the vanilla caramel over the filled chocolate tartlets. Optionally, add some additional chocolate shavings or sea salt on top for extra flair!
  7. Chill and serve: Refrigerate your tartlets for at least 2 hours or until the chocolate filling is set.

Notes

Consider garnishing with whipped cream, berries, or cocoa powder. These tartlets can also be frozen for up to a month, thawing in the refrigerator before serving.
