- 25 grams ube powder
- 1 teaspoon ube extract

- 1 egg yolk
- 300 grams white chocolate chips
Instructions
- Prepare the dry ingredients: Mix the flour, ube powder, baking powder, and salt in a bowl. Set aside.
- Combine eggs and ube extract: In a separate bowl, whisk together eggs and ube extract and set aside.
- Mix the butter: In a bowl, mix cubed cold butter for about 30-35 seconds until crumbly.
- Add sugars: Incorporate brown and white sugar and pulse until pebble-like consistency is achieved.
- Incorporate white chocolate chips: Add chocolate chips and mix until fully combined.
- Combine dry and wet mixtures: Pour in the dry ingredients and mix carefully.
- Stir in egg mixture: Add the egg yolk and ube mixture, mixing just until combined.
- Portion the dough: Form large dough balls (about 165 grams each) and place them on a tray.
- Chill the dough: Freeze the dough balls for at least 2 hours.
- Preheat and bake: Preheat oven to 365°F (185°C), bake the cookies for 15-17 minutes, cool on a wire rack.
