Description

Delicious Sweet Potato Pecan Bars combining natural sweetness from sweet potatoes and a crunchy pecan topping, perfect for any occasion.


Ingredients

  • 2 cups sweet potatoes, mashed (about 2 medium sweet potatoes)
  • 1 cup pecans, chopped
  • 1 cup brown sugar, packed
  • 1/2 cup butter, melted
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes into small chunks. Cook them in boiling water for about 15-20 minutes until tender. Mash them and set aside.
  3. In a separate bowl, mix the all-purpose flour with half of the chopped pecans to create the crust.
  4. In a larger mixing bowl, combine the cooled mashed sweet potatoes, brown sugar, melted butter, eggs, vanilla extract, ground cinnamon, and salt. Stir until smooth.
  5. Gradually add the flour and pecan mixture to the sweet potato filling, stirring gently until just combined.
  6. Pour the filling into a greased 9×13-inch baking dish and spread evenly. Sprinkle the remaining pecans on top.
  7. Bake for about 30-35 minutes, or until the edges are set and the center feels slightly firm. Insert a toothpick to check for doneness.
  8. Allow to cool in the pan for at least 15 minutes, then cut into squares or bars. Serve warm or at room temperature.

Notes

For extra flavor, serve with whipped cream, ice cream, or a sprinkle of cinnamon.
