Description

Delightful Sweet Potato Cream Cheese Bars that are comforting, delicious, and easy to make.


Ingredients

  • 2 cups sweet potatoes, mashed
  • 8 oz cream cheese, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish to prevent sticking.
  2. Mix the sweet potatoes and cream cheese in a large mixing bowl until smooth and creamy.
  3. Add the sugar, eggs, vanilla extract, cinnamon, and nutmeg to the mixture and mix well.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually fold the flour mixture into the sweet potato mixture until just combined.
  6. Pour the batter into the greased baking dish and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  8. Allow to cool before slicing into squares or rectangles. Serve and enjoy!

Store in an airtight container in the refrigerator for up to a week. These bars also freeze well for up to three months.
