- 2 cups sweet potatoes, mashed
- 8 oz cream cheese, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish to prevent sticking.
- Mix the sweet potatoes and cream cheese in a large mixing bowl until smooth and creamy.
- Add the sugar, eggs, vanilla extract, cinnamon, and nutmeg to the mixture and mix well.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually fold the flour mixture into the sweet potato mixture until just combined.
- Pour the batter into the greased baking dish and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Allow to cool before slicing into squares or rectangles. Serve and enjoy!
Notes
Store in an airtight container in the refrigerator for up to a week. These bars also freeze well for up to three months.
