Delicious and nutritious Sweet Oatmeal Breakfast Bars made with whole oats and bananas, perfect for quick breakfasts or snacks.

- 2 cups rolled oats
- 1 cup mashed bananas (about 2 bananas)
- 1/2 cup nut butter (peanut or almond)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, combine the rolled oats, mashed bananas, nut butter, honey or maple syrup, vanilla extract, cinnamon, and salt. Stir until well combined.
- Fold in the nuts or chocolate chips if desired.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 20 to 25 minutes or until the top is golden brown and fragrant.
- Let it cool before cutting into bars. Enjoy!
