Description

Delicious and nutritious Sweet Oatmeal Breakfast Bars made with whole oats and bananas, perfect for quick breakfasts or snacks.


Ingredients

  • 2 cups rolled oats
  • 1 cup mashed bananas (about 2 bananas)
  • 1/2 cup nut butter (peanut or almond)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, combine the rolled oats, mashed bananas, nut butter, honey or maple syrup, vanilla extract, cinnamon, and salt. Stir until well combined.
  3. Fold in the nuts or chocolate chips if desired.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 20 to 25 minutes or until the top is golden brown and fragrant.
  6. Let it cool before cutting into bars. Enjoy!

Store in an airtight container at room temperature for up to one week. Freeze for up to three months.
