A delightful citrus-infused cake that combines olive oil and fresh orange for a moist and rich dessert, perfect for any occasion.

- 160 ml Milk
- 60 ml Orange juice (from one medium orange)
- 15 ml Lemon juice (1 tbsp)
- 250 g Granulated sugar
- Zest of 1 and ½ Medium orange
- 3 eggs
- 150 ml Extra virgin olive oil
- 230 g All purpose flour
- 2 tsp Baking powder
- 30 g Granulated sugar (for garnish)
- 150 g Icing sugar
- 20 ml Orange juice (1½ tbsp)
- Wedges of 1 orange
Instructions
- Preheat your oven to 350°F (180°C). Grease and flour a 9-inch cake pan.
- Make the buttermilk by mixing the milk with orange juice and lemon juice in a small bowl. Set aside.
- In a larger bowl, rub the granulated sugar with the orange zest until moist and aromatic.
- Add the eggs to the zesty sugar mixture and beat together until light and frothy.
- Slowly pour in the olive oil while continuing to mix until well combined.
- Sift the all-purpose flour with the baking powder in a separate bowl. Gradually mix half into your batter.
- Incorporate the buttermilk mixture and mix until fully combined.
- Add the remaining dry ingredients and mix until smooth.
- Pour batter into the prepared pan, sprinkle with granulated sugar, and bake for 45 to 50 minutes.
- Allow to cool for 10 minutes before unmolding.
- For the glaze, beat the icing sugar with orange juice until smooth and drizzle over the cake.
Notes
Serve with tea or coffee, at brunch, or with ice cream for a delightful treat. Store wrapped at room temperature or refrigerate for longer freshness.
