Description

A delightful citrus-infused cake that combines olive oil and fresh orange for a moist and rich dessert, perfect for any occasion.


Ingredients

Scale
  • 160 ml Milk
  • 60 ml Orange juice (from one medium orange)
  • 15 ml Lemon juice (1 tbsp)
  • 250 g Granulated sugar
  • Zest of 1 and ½ Medium orange
  • 3 eggs
  • 150 ml Extra virgin olive oil
  • 230 g All purpose flour
  • 2 tsp Baking powder
  • 30 g Granulated sugar (for garnish)
  • 150 g Icing sugar
  • 20 ml Orange juice (1½ tbsp)
  • Wedges of 1 orange

Instructions

  1. Preheat your oven to 350°F (180°C). Grease and flour a 9-inch cake pan.
  2. Make the buttermilk by mixing the milk with orange juice and lemon juice in a small bowl. Set aside.
  3. In a larger bowl, rub the granulated sugar with the orange zest until moist and aromatic.
  4. Add the eggs to the zesty sugar mixture and beat together until light and frothy.
  5. Slowly pour in the olive oil while continuing to mix until well combined.
  6. Sift the all-purpose flour with the baking powder in a separate bowl. Gradually mix half into your batter.
  7. Incorporate the buttermilk mixture and mix until fully combined.
  8. Add the remaining dry ingredients and mix until smooth.
  9. Pour batter into the prepared pan, sprinkle with granulated sugar, and bake for 45 to 50 minutes.
  10. Allow to cool for 10 minutes before unmolding.
  11. For the glaze, beat the icing sugar with orange juice until smooth and drizzle over the cake.

Notes

Serve with tea or coffee, at brunch, or with ice cream for a delightful treat. Store wrapped at room temperature or refrigerate for longer freshness.
