Description

Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup sugar
  • 1 cup water
  • Fresh strawberries, hulled
  • Sweet red bean paste
  • Cornstarch (for dusting)

Instructions

  1. In a microwave-safe bowl, mix together sweet rice flour, sugar, and water until smooth.
  2. Cover the bowl with plastic wrap and microwave for 1 minute.
  3. Stir the mixture well, then microwave for an additional minute.
  4. Stir again and microwave for another 30 seconds, until the dough becomes translucent.
  5. Dust your work surface with cornstarch, then carefully transfer the mochi dough onto it.
  6. Allow the dough to cool for a few minutes so it’s safe to handle.
  7. Divide the dough into small, even pieces.
  8. Flatten each piece, place a small amount of sweet red bean paste and a fresh strawberry in the center, then wrap the dough around the filling, sealing the edges nicely.
  9. Roll the mochi lightly in cornstarch to prevent any stickiness.
