Ingredients
Scale
- 1 cup sweet rice flour (mochi flour)
- 1/4 cup sugar
- 1 cup water
- Fresh strawberries, hulled
- Sweet red bean paste
- Cornstarch (for dusting)
Instructions
- In a microwave-safe bowl, mix together sweet rice flour, sugar, and water until smooth.
- Cover the bowl with plastic wrap and microwave for 1 minute.
- Stir the mixture well, then microwave for an additional minute.
- Stir again and microwave for another 30 seconds, until the dough becomes translucent.
- Dust your work surface with cornstarch, then carefully transfer the mochi dough onto it.
- Allow the dough to cool for a few minutes so it’s safe to handle.
- Divide the dough into small, even pieces.
- Flatten each piece, place a small amount of sweet red bean paste and a fresh strawberry in the center, then wrap the dough around the filling, sealing the edges nicely.
- Roll the mochi lightly in cornstarch to prevent any stickiness.
- Enjoy your fresh Strawberry Mochi!
