Description

A charming bite-sized dessert featuring chewy mochi dough filled with fresh strawberries, perfect for any occasion.


Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup sugar
  • 1 cup water
  • 1/2 cup fresh strawberries, pureed
  • Potato starch (for dusting)
  • Strawberry slices (for filling)

Instructions

  1. In a bowl, mix the sweet rice flour and sugar until well combined.
  2. Gradually add water and strawberry puree to the flour mix, stirring until smooth.
  3. Pour the mochi mixture into a microwave-safe dish and cover it with plastic wrap.
  4. Microwave for 1 minute, then stir and microwave for an additional 1 to 2 minutes until cooked through.
  5. Dust a clean surface with potato starch and pour the dough onto it.
  6. Allow the dough to cool slightly before cutting into squares.
  7. Place a strawberry slice in the center of each square and fold the mochi around it.
  8. Dust with potato starch before serving to prevent sticking.

Notes

Best enjoyed fresh, but can be stored in an airtight container at room temperature for up to two days.
