Ingredients

- 1 cup sweet rice flour (mochi flour)
- 1/4 cup sugar
- 1 cup water
- 1/2 cup fresh strawberries, pureed
- Potato starch (for dusting)
- Strawberry slices (for filling)
Instructions
- In a bowl, mix the sweet rice flour and sugar until well combined.
- Gradually add water and strawberry puree to the flour mix, stirring until smooth.
- Pour the mochi mixture into a microwave-safe dish and cover it with plastic wrap.
- Microwave for 1 minute, then stir and microwave for an additional 1 to 2 minutes until cooked through.
- Dust a clean surface with potato starch and pour the dough onto it.
- Allow the dough to cool slightly before cutting into squares.
- Place a strawberry slice in the center of each square and fold the mochi around it.
- Dust with potato starch before serving to prevent sticking.
Notes
Best enjoyed fresh, but can be stored in an airtight container at room temperature for up to two days.
