- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 cups fresh strawberries, hulled and sliced
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1/4 teaspoon vanilla extract
- 1/2 cup rolled oats
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish.
- In a mixing bowl, combine the flour, sugar, and salt. Add the butter and mix until crumbly. Press half into the bottom of the baking dish.
- In another bowl, toss the strawberries with cornstarch, lemon juice, and vanilla. Spread the strawberry mixture over the crust.
- Sprinkle the remaining crumb mixture over the strawberries and add rolled oats on top.
- Bake for 30-35 minutes until golden brown and fragrant.
- Cool in the dish before slicing into squares.
Notes
For an extra zing, add grated lemon zest to the crumb topping.
