Description

A delightful Strawberry Chocolate Cake that combines rich chocolate with fresh strawberries.


Ingredients

  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup homemade strawberry jam
  • 2 cups fresh strawberries, sliced
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1/4 cup pureed fresh strawberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to ensure a smooth release after baking.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir well to mix all the dry ingredients together.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat the mixture on medium speed for 2 minutes until well combined.
  4. Carefully stir in the boiling water. Don’t worry if the batter seems thin; that’s completely normal!
  5. Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or until a toothpick comes out clean when inserted into the center.
  6. Once baked, let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
  7. For the frosting, beat together the cream cheese and butter until smooth. Gradually add the powdered sugar and pureed strawberries, blending until combined into a luscious frosting.
  8. Once the cakes have cooled, layer them with the homemade strawberry jam and fresh strawberries between the cake layers. Frost the top and sides with the strawberry cream cheese frosting.
  9. Serve and enjoy this decadent treat!

Notes

For a richer flavor, consider adding a layer of chocolate ganache on top.
