  • 1/3 cup melted coconut oil or butter
  • 1/2 cup sugar (brown sugar or coconut sugar for a healthier option)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour (or whole wheat flour for a healthier twist)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Combine the mashed bananas with the melted coconut oil or butter in a large bowl. Stir in the sugar, eggs, and vanilla extract until smooth.
  3. Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add this dry mixture to the banana mixture, stirring gently until just combined.
  4. Fold in the strawberries and chocolate chips, being careful not to over-mix.
  5. Pour the batter into the prepared loaf pan and smooth it out with a spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
