- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour (or whole wheat flour for a healthier twist)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- Combine the mashed bananas with the melted coconut oil or butter in a large bowl. Stir in the sugar, eggs, and vanilla extract until smooth.
- Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add this dry mixture to the banana mixture, stirring gently until just combined.
- Fold in the strawberries and chocolate chips, being careful not to over-mix.
- Pour the batter into the prepared loaf pan and smooth it out with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For added richness, serve warm with butter or nut butter. This bread also freezes well for later enjoyment.
