- 1 block (250g) softened cream cheese

- 1/4 cup powdered sugar
- 1 large egg
- 2 cups chopped strawberries
- 1 teaspoon lemon juice
- 1 teaspoon lemon zest
- 1/4 cup white sugar
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 375°F (190°C).
- Make the crust by blending flour, brown sugar, and baking powder.
- Pour in melted butter, egg, and vanilla. Mix until it resembles a crumb mixture.
- Prepare the cheesecake filling by mixing softened cream cheese, vanilla, powdered sugar, and egg until smooth.
- Create the strawberry mixture by combining chopped strawberries, lemon juice, lemon zest, white sugar, and cornstarch.
- Layer the ingredients in an 8×8 inch baking pan lined with parchment paper.
- Press half of the crumb mixture into the bottom, add cheesecake filling, then strawberry mixture, and top with remaining crumb mixture.
- Bake for 40-45 minutes until golden brown.
- Cool for at least 30 minutes before cutting into squares.
