Description

Delicious Strawberry Cheesecake Crumb Bars with creamy filling and a buttery crust, perfect for any occasion.


Ingredients

  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup melted salted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 block (250g) softened cream cheese
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1 large egg
  • 2 cups chopped strawberries
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup white sugar
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make the crust by blending flour, brown sugar, and baking powder.
  3. Pour in melted butter, egg, and vanilla. Mix until it resembles a crumb mixture.
  4. Prepare the cheesecake filling by mixing softened cream cheese, vanilla, powdered sugar, and egg until smooth.
  5. Create the strawberry mixture by combining chopped strawberries, lemon juice, lemon zest, white sugar, and cornstarch.
  6. Layer the ingredients in an 8×8 inch baking pan lined with parchment paper.
  7. Press half of the crumb mixture into the bottom, add cheesecake filling, then strawberry mixture, and top with remaining crumb mixture.
  8. Bake for 40-45 minutes until golden brown.
  9. Cool for at least 30 minutes before cutting into squares.
